Ingredients: ½ cup liquid egg substitute, such Egg Beaters, 2 corn tortillas, 1 tablespoon salsa, and 2
teaspoons of shredded reduced-fat Cheddar cheese. Step 1: Add cheese and salsa to the tortillas. In
the microwave, heat for 30 seconds or until the cheese melts. Step 2: In the meanwhile, put cooking spray on
a small nonstick skillet. Heat for about 90 seconds, then add the egg replacement and cook,
stirring, over medium heat until the eggs are cooked through. Spoon half of the scrambled egg onto each taco.
